Testing induction in your own kitchen

A repeatable way to judge induction against your old hob: controlled boil tests, simmer stability, cleaning time and a fair look at the energy question.

Manufacturer boil times are measured with an unstated pan, an unstated volume of water and an unstated starting temperature, which makes them useless for comparison. Your own kitchen can produce better numbers in an afternoon. This article sets out tests you can run repeatably, and explains why the energy question deserves less attention than it usually gets.

A boil test that is actually comparable

Fix everything except the hob:

  • Same pan, same lid position, same zone size relationship.
  • Same water volume, measured rather than estimated.
  • Same starting temperature, taken with a thermometer.
  • Same finishing point, defined as a rolling boil rather than a judgment call.
  • Three runs, averaged, because single runs vary.

Run it on the old hob before it is removed if you can. If not, run it on a portable induction unit against your existing hob, which is the closest fair comparison available before committing.

Simmer stability, which matters more

Most cooking is not boiling. Set the lowest usable setting under a pan of water and watch it for twenty minutes. What you are looking for is whether the surface stays just below a boil, or whether it cycles between still and bubbling.

Some induction hobs at very low settings pulse power on and off rather than delivering steady low output, which shows up as a rhythmic surge. Whether that bothers you is personal, and it is exactly the sort of thing you can only learn by trying.

Cleaning, which is easy to quantify

Time yourself. Boil over a small quantity of milk, let the surface cool, then clean it. Repeat on the old hob if it is still available. The difference is usually large and is one of the more reliable satisfactions people report, because the surface around the pan does not reach a temperature that bakes spills on.

The energy question, in proportion

Induction puts a larger share of its energy into the pan than a gas burner does, so it uses less energy per task. That is real. It is also small relative to a household's total energy use.

For scale, EIA reporting that air conditioning accounts for roughly 12 percent of U.S. home energy expenditures puts one major end use in context, and cooking sits well below that in most homes. A hob swap is not a bill-reduction strategy.

If you want to measure it anyway, the physics is straightforward. Energy is conserved through each conversion, as the EIA explainer on the laws of energy sets out, so the comparison is between how much of the input reaches the food and how much heats the kitchen. Measure with a plug-in meter on a portable unit and a gas meter reading over a fixed task, and expect a modest number.

Common questions

Is induction faster than gas? For boiling water, usually and noticeably. For other tasks the difference is smaller and depends on the pan.

Why does my simmer pulse? Some hobs cycle power at very low settings. Try a heavier pan, or a different zone, before concluding it is faulty.

Should I measure energy use? Only out of curiosity. The saving is real and too small to justify the effort as a decision input.

How long before I know whether I like it? Two weeks of ordinary cooking is usually enough, which is why a portable unit is such a useful trial.
