Reading induction hob and range specifications
Which induction specifications matter: zone diameters, bridging, boost sharing, minimum pan size and total appliance load, and which marketing numbers do not.
Induction specification sheets are unusually easy to misread, because the headline wattage of a single zone can rarely be delivered on every zone at once. This article covers the numbers that decide whether a hob suits your cooking and your kitchen, and the ones that exist mainly to look impressive in a showroom.

The boost row is where most disappointment originates. Manufacturers commonly share a power budget across pairs of zones, so a hob advertised with a large boost figure may reduce a neighboring zone when you use it. The installation manual states this; the brochure often does not.
Comparing against what you are replacing
Most induction buyers are switching from gas, and gas is still the incumbent in a large share of U.S. kitchens. EIA's finding that the majority of U.S. households used natural gas in 2020 describes that installed base, though it covers all household gas use rather than cooking alone.
Comparing across fuels needs care. Gas burner ratings and induction zone ratings are both stated in power terms, but a gas burner loses a substantial share of its output to the air around the pan while induction puts its energy into the pan base. The EIA overview of how natural gas is used is a reasonable place to see where residential gas consumption sits within the wider picture, which is a useful corrective: cooking is a small part of most households' gas use, so switching a hob alone changes the bill far less than people expect.
Numbers that do not tell you much
- Peak boost wattage on its own. Without the sharing rules it is close to meaningless.
- Number of power levels. Twenty steps versus nine changes almost nothing in practice.
- Claimed boil times. Measured with an unstated pan and an unstated water volume.
- Connectivity features. Real, but not a reason to choose between hobs.
Do the electrical check before shortlisting
Total appliance load determines the circuit. A freestanding induction range generally requires a dedicated 240-volt supply installed to the appliance's own instructions, and a built-in hob may differ from a range in the same product line. That circuit, and any panel work behind it, is licensed electrical work with a permit and an inspection.
Get the total load from the installation manual for each specific model before you fall in love with one, because the electrical scope can differ enough between candidates to change the total project cost. Is more wattage always better? No. Sustained power and zone size matter more than a boost figure you can only use on one zone at a time.
